The Redbud’s flowers, leaves, pods & seeds are all edible. The inner bark has been used medicinally for colds, flu, respiratory issues and gastric upset.
Redbud flower are very high in vitamin C, they are slightly sweet & tart. Young leaves can be eaten raw, early pods and seeds can also be eaten. Seeds can be dried and cooked as needed. The seeds are very high in protein and have a good amount of fat.
